Algae Brownies: From Disgusting to Delish!![]() Yield: Makes 16 large brownies
Ingredients
10 Tablespoons Solazyme sustainable microalgae food powder (not available in stores!) 1/2 cup water 1 1/4 cups sugar 3/4 cup plus 2 tablespoons unsweetened cocoa powder (natural or Dutch-process) 1/4 teaspoon salt 1/2 teaspoon pure vanilla extract 1/2 cup all-purpose flour Equipment: An 8x8 baking pan, extra pot, adventurous spirit Preparation: Preheat the oven to 325°F. Line the baking pan with parchment paper or tin foil. Combine the microalgae food powder, water, sugar, cocoa, and salt in a heatproof bowl and set the bowl on top of a pot of simmering water. Stir gently until the ingredients are smooth and hot enough that it's a little uncomfortable when you dip your finger in to test. Remove the bowl from the water and let cool until it is warm and not hot anymore. You're now done with that pot of water. Go ahead and turn off the heat. Add the vanilla to the cocoa microalgae mixture. Add the flour and stir until it's completely incorporated, then beat vigorously for about 40 strokes with a wooden spoon or a rubber spatula. Spread evenly in the lined pan. Bake until a toothpick plunged into the center comes out slightly moist with batter, 20 to 25 minutes. Let cool completely on a rack. Enjoy!
